NUTELLA CAKE

see, this is how it will end up with you if this world was made of nutella ;) & of course a caloriefree " u wish "

1 Cake Mix (store bought) chocolate or vanilla works well but feel free to be creative!
1 Jar of Nutella
1 Pint Heavy Whipping Cream
1 tsp Pure Vanilla Extract
1 Pint Strawberriesor any fresh fruits in season ( noway you are thinking watermelon ok ;)
2 tsp Sugar

Prepare the cake according to the manufactures directions for 2 circular layers. Allow cake to completely cool before moving on to the next steps. Doing this a day ahead works really well.

Whip cream and vanilla on an electric mixer or use a hand mixer. When it has formed soft peaks you can add 2 tsp liqueur as well  Godiva or Frangelico works great!
Slice strawberries saving several whole berries to put on top of the cake. Mix sugar with the berries.

Ice both tops of the cake layers with Nutella
Place a big dollop of whipped cream in between the layers, on top of the strawberries.

OREO ICECREAM PUDDLE

Oreo icecream puddle , my friend's Scrumptious Sweets

This is sis hajar's creation ,and she was kind enough to share it with us , thx hajar .... :))

1 regular package of Oreos
1 half-gallon ice cream (she used natural Vanilla Bean flavour ), softened
1 cup hot fudge ( dr dr oetker ready made syrup )
Caramel sauce for garnish ( Mrs. Richardson’s
springform pan so u could make it more cake-like.

First, use a food processor to finely grind 16 oreos (filling included). its pressed into the bottom of the springform pan.
Next, spread half of the ice cream over the crumb base. I think the best way to do this is to dollop the ice cream over as much of the surface as possible, and then gently smooth it. That way, you’ll avoid spreading the crumb base all over as well.

coarsely crush12 Oreos in a large plastic bag and then sprinkled that over the first layer of ice cream. drizzle the cup of hot fudge over the top of the Oreos and gently spread it with a spatula to form an Oreo-fudge center. Then, top everything with the rest of the ice cream, again dolloping and spreading gently.

put the springform pan on a baking sheet, covered it with foil, and let the cake set in the freezer until firm, about 2 hours. Then, run a hot knife around the outside of the cake and released the side of the pan. (just left the base underneath – wasn’t going to attempt a platter transfer with a loose crumb crust.) coarsely crush 10 more Oreos and then press the pieces into the outside of the cake. (Dr. O called it an Oreo mosaic!)
the recipe was taken from oreo's recipes in canadian saveur magazine, thznk you hajar for sharing it with us :)

HOMEMADE COTTAGECHEESE

Cottage cheese is really easy to make at home. It is probably the easiest of all the cheeses to make. Cottage cheese is very healthy and nutritious, not to mention easily digested

Cook Time5 min, to make around 2 cups
Times:Prep10 min Inactive Prep35 min Cook5 min Total:50 min

1 gallon pasteurized skim milk
3/4 cup white vinegar
1 1/2 teaspoons kosher salt
1/2 cup half-and half-or heavy cream

Pour the skim milk into a large saucepan and place over medium heat. Heat to 120 degrees F. Remove from the heat and gently pour in the vinegar. Stir slowly for 1 to 2 minutes. The curd will separate from the whey. Cover and allow to sit at room temperature for 30 minutes.

Pour the mixture into a colander lined with a tea towel and allow to sit and drain for 5 minutes. Gather up the edges of the cloth and rinse under cold water for 3 to 5 minutes or until the curd is completely cooled, squeezing and moving the mixture the whole time. Once cooled, squeeze as dry as possible and transfer to a mixing bowl. Add the salt and stir to combine, breaking up the curd into bite-size pieces as you go. If ready to serve immediately, stir in the half-and-half or heavy cream. If not, transfer to a sealable container and place in the refrigerator. Add the half and half or heavy cream just prior to serving
All utensils should be cleaned very well before beginning.

1 quart (1 liter) whole milk
4 drops liquid rennet
½ teaspoon of salt, plus more to taste
6 tablespoons heavy cream (or half-and-half), or a mixture of heavy cream and buttermilk

Heat the milk very slowly in a medium-sized, non-reactive saucepan. Use the lowest heat possible and if you have a flame-tamer for underneath the saucepan, now's a good excuse to use it.

Insert a thermometer into the milk (I use a chocolate thermometer, which is easy to read) and heat until the milk until it reaches 85 degrees F.
Turn off heat and stir in rennet. Stir gently for 2 minutes.
Cover the saucepan with a clean tea towel draped over the top and put the lid on. Let stand at room temperature for 4 hours.

After 4 hours, the mixture will be very softly set and marvelously jiggly. Take a sharp knife and cut the mixture diagonally 5 or 6 times, then do the same in the opposite direction.

Sprinkle in the salt then set the pan over extremely low heat and cook, stirring gently, until the curds separate from the whey. It will take just a few minutes.

Do not overcook it at this point or your cottage cheese curds will be tough.

Line a strainer with cheesecloth or étamine, and set it inside a large bowl. Pour the mixture into the cloth and stir it gently to drain off the copious amount of whey

Fold the ends of the cheesecloth over the cheese and chill the strainer (keeping the bowl underneath) in the refrigerator. Let drain for about 1 hour, stirring once or twice.

Spoon the cottage cheese from the cloth into a bowl and stir in the cream, or cream and buttermilk. Taste, and add more salt if necessary.

CHOCOLATE CHIP COOKIES

1/2c sugar
1c brown sugar
2/3c oil
2 eggs
2ts vanilla
3c flour

2c chocolate chips

Crumb Cake

(this recipe is originally from my sister who got it from a Mennonite friend. It is real quick, easy, moist and CHEAP)

2c flour
1c brown sugar
3/4c margarine (I like to use 1c)
Mix together until small crumbs. Set aside one cup worth for later. To the rest add:
1ts baking soda
1 egg
1c milk

Mix well and pour into greased 9x13 pan. Top with chopped up fruit (in the picture we used sliced apples and then sprinkled them with a bit of brown sugar and cinnamon. You can also use blueberries and other fruit.) Sprinkle the cup of crumbs on top and gently pat down. Bake at 350 for about 15-20 minutes.

COCONUT VANILLA BALLS

I didn't really measure anything as it is such a versatile thing to make. You can use any kind of nuts or seeds and dried fruit. The choices are endless. I just used what was already at hand and easy to add.

uncooked oats
raw sunflower seeds
shredded unsweetened coconut
raisins
pure vanilla
pure cacao
mashed banana
little water

That's it....you mix it all in whatever portions suit your fancy adding just enough water to make the dough hold together and form little bite sized balls and arrange on a nice tray. Then you lightly sprinkle them with coconut and stick them in the freezer to firm up.

No baking, no sweeteners of any kind, no equipment necessary! all you need is a mixing bowl, wooden spoon, and a fork and plate for mashing the banana. Mine are not as chocolaty as I'd like but that's because I don't want to risk getting sick again. I put just enough in there for flavor. Hope you enjoy!

CHOCOLATE MELT WITH OATS

Mix oats and chocolate and add nuts (of yr choice roasted almonds)
Mix together and ballshape them.
