OLIVE N FETA CHEESE SALAD


This ones not so difficult...fast n easy i wud say...

6 medium-small sized turnips
3 medium sized carrots
3 medium sized cucumbers
2 pickled cucumbers
2 big tomatoes
250gm fetta cheese
10 olives
1tbsp dill
salt to taste
1tsp olive oil
1/2 lemon

cut the turnip, carrots, cucumbers, tomatoes to same small quarter size, sprinkle salt, olive oil,
add olives,dill,squeeze in the lemon,,,and giv it a good stir to mix well and let the tomatoes leave some of its juice in the mix...

cut into cubes and add the fetta cheese (cus if you add it earlier it wud break apart in the stir) and stir gently again.

TOASTED MOZARELLA CHEESE BREAD



nothing at ma palce, just a loaf of bread and mozarella cheese...and ma oven!

SHAHI TUKRAY - CREAMY SWEET TOAST


1 liter of milk
8-10 slices of bread
1 to 1 1/2 cup sugar
1 cup milk powder
 2-3 green cardamom(discard its shell/skin-ground seeds)
oil
Pistachios(sliced thin vertically)
Almonds(sliced thin vertically)
yellow food color
1. Fry the slices of bread in a little oil until light brown (I made french-toast in place of this)
2. Remove ,cut these bread slices diagonally and set it aside.
3. Combine milk, milk powder, sugar ,color and cardamom.
4. Bring it to boil and reduce heat to medium.
5. Keep simmering until the milk gets thickened.
6. Arrange the bread slices in the milk and bring to boil. Turn once to coat both sides. Let milk thicken.Remove from heat.
7. Now arrange the soaked bread slices where you want to serve. Decorate it with chopped nuts. Serve it cold.

HUMMUS A LA MARWA


ok now we are talking , this is a puddle of joy ! yeah it's what you are thinking of : speckled hummus !

This recipe makes about a quart of hummus. It keeps in the fridge for 7-10 days and freezes reasonably well, though, so there's no reason not to make a bunch and save some for later.u can serve with pet abread, crackers water bisuits and with all yr BBQ ideas ( meats fish or veggies)

1 large (or two medium) onion, sliced
6-10 garlic cloves, crushed and peeled
2 tbs Kalamata olive oil
2 tsp ground cumin
1 tsp Aleppo pepper or paprika (optional)
½ cup chopped parsley
3 14-oz cans chickpeas (or fava beans), drained
¾ cup tahini (raw sesame paste)
¼ cup lemon juice
3 tsp salt
Up to ½ cup Kalamata olive oil
Up to 1 cup warm salted water, bean cooking water, or stock
Equipment: frying pan, food processor

ok , now its my own method ,its not the regular hummus that everybody else mix :) u will enjoy inchaALAH :
get started : b'smALAH
Heat 2 tbs olive oil in the frying pan. Saute the onions and garlic until limp. Add the cumin (and pepper or paprika), stir for 30 seconds, then take off heat. Stir in the parsley, then let cool.

Process the fried onion mixture and most of the other ingredients in 2 or 3 batches in a food processor.
Make sure to have some of all ingredients in each batch, in this order bottom-to-top: onions & garlic, chickpeas, tahini, lemon juice, salt, ½ of the olive oil. Process until smooth, adding a little olive oil and a little warm salted water as needed to get a smooth creamy consistency. Olive oil makes it richer, water makes it lighter.

Serve immediately with toasted pita, or keep in the fridge for up to 8 days, or in the freezer for several weeks. Smooth the surface and cover with a layer of olive oil for better keeping. ,sorry for the mess ...and yeah thi si sthe sassy food that you wont b able to resist licking yr fingertips after digging in
enjoy :))

POTATOE SALAD


Potatoes , boiled and peeled- red skinned is great too (but leave the skins on!)!
Cut up celery, into small pieces
Cut up green pepper into small pieces
Cut up white onion, into small pieces
Green olives with pimentos, cut up into small pieces
3 hardboiled eggs, boiled, cut up into small pieces
Salt, pepper and mayo to taste
Garnish with paprika - my favorite is sweet Hungarian paprika .

SHEEFA DISGUISED IN ATAYEF


Basic bread dough
1.5 pounds ground beef or lamb
2 diced onions. (I used dry onion flakes as a time saver)
3 tablespoons tomato paste
Salt ,pepper & Allspice
Oil for the pan
1/2 cup pine nuts

Preheat oven to 450 degrees. Combine meat, onions, and seasonings and cook with little oil until browned fully
There are few things that you can add to the meat to flavor it even more, such as adding yogurt or pomegranate molasses or Tihini sauce or tomato sauce.

Add the pine nuts
Cut the dough out to form about 3-4" rounds. Let it rest for 10-15 minutes.
Place some of the meat filling onto the dough

Place on an oiled baking sheet and bake at 450 degrees for about 15 minutes. But depending on your oven it might take less or more time.

Broil the top to a nice golden brown color. Do not leave for a long time under the broiler, they burn fast! u can always have different shapes and the traditional recipe you have them round yet i thought this will be faster and looks like ( atayef ) u can always have yr own creation when u have the basic recipe !:)

obergines ( brush the obergines with olive oil and wrap it in foil , roast it in the oven till its very tender , leave it till the vapor seperates the skin from the flesh so u can easily clean it up and use the meat ( the pulp is ok to use)

mix it with olive oil+ lemon juice +cumin + tahini (sesamee oil ,mayo +chickpeas salt n peper and garlic ,mix well ( u can use food processor or blender to get a homogenious paste ) should be thick and creamy
serve , sprinkel generous amount of olive oil and garnish
NB : Tahini, tahine, tehina, or sesame paste is a paste of ground sesame seeds used in cooking.

TOMATOES WITH MOZARELLA AND PESTO - OLIVE OIL



Slice tomatoes ,mozarella cheese ,mix the persto with olive pil , sprinke generously

** you can use home made pesto sauce ( in a blender mix the persto with pine and garlic olive oil salt n pepper )

refregerate in a jar till u need it ( keeps fresh for a couple of weeks )

CHICKEN PIE


Easy to make and can be stored in freezer, well covered.
Dough:
2,5 deciliters all puropuse flour
0,5 deciliter graham flour
0,5 teaspoon baking powder
50 grams butter or margarine
1 deciliter Turkish yoghurt
Salt

Filling:
Shredded, pre-cooked chicken meat (or any leftovers you might have)
1 green chilli pepper, chopped
1 yellow bell pepper, chopped
1/2 onion, chopped
1 garlic clove, finely chopped
Handful or two of pre-cooked chick peas
1 tomato, sliced
Parsley, chopped
1-2 deciliters Turkish yoghurt
1-2 tablepsoons tomato paste
Harissa or other hot condiment, if desired
Salt, pepper
Turmeric
Grated cheese

Make dough in blender or by hand. Press dough into mould and prick carefully with a fork. Place in fridge for about 30 minutes. Pre-heat oven to 225 degrees Celsius. Prepare vegetables. Fry onion, garlic and peppers lightly and set aside. Mix everything except parsley and tomatoes. Bake pie crust in oven for 10-20 minutes, until the edges turn a bit brown. Fill crust, top with cheese and tomatoes. Bake for 20-30 minutes - cover with aluminium foil if it looks like it might burn before baked through. Sprinkle with parsley before serving.

HOME MADE GRANOLA


3 C rolled oats
1/2 C chopped walnuts
1/2 C almond slivers
1/2 C sunflower seeds
1/2 C dried coconut flakes (I used the unsweetened kind)
1/2 t salt
1/3 C canola oil
1/3 C honey
1 t vanilla extract
1/2 C chopped dried apicots
1/2 C golden raisins


1. Pre-heat oven to 300 degrees F. Spray a large baking sheet with oil spray and set aside.

2. Combine ingredients from oats to salt in a large bowl.

3. In a small bowl, whisk together oil, honey and vanilla. Pour onto oat mixture and mix well with your hands, being sure to coat everything well.

4. Spread on the baking sheet in an even layer and bake for 20-30 minutes or until golden, stirring every 10 minutes.  
Mix with milk and you have a healthy breakfast.
add the fruit of yr choice to creat a healthy breakfast .

You can add grains,or raisans and nuts to that or cerial in order to have a nutrisious breakfast or even a snack for your family .
i prefer fresh fruits or add some honey or jam to kill the craving for a bar of chocolate while dieting (its working @ least for me lol loosing the 3 kilos gained in ramadan guys )

SAMEN - CLARIFIED BUTTER/GHEE


Yields about ¾ lb (336g).

Along with olive oil, Samen is the most often used cooking fat in middle eastern cuisine. Samen is nothing but clarified butter, traditionally made from sheep’s milk. In today’s world Samen is made mostly from cow’s milk and could be purchased at major grocery stores as well as middle eastern shops. Butter can be substituted for Samen in most recipes, although one should be careful not to burn the more delicate butter.

1lb (450g) unsalted butter

In a saucepan, melt the butter over medium heat and bring to a gentle simmer, skimming any “scum” off the surface (reserve the “scum” in a small bowl). Let cook for 4-5 minutes without letting the Samen take on too much color. Remove from the heat and let cool for about an hour or until it is barely warm and the milk solids have collected in the bottom. Strain through a fine strainer into a clean jar and store in the fridge. Do not throw the butter sediment (cooked milk solids) away. Remove them from the strainer and add to the reserved butter “scum”. Add salt and you will have what is called Raybit Samen, a tasty treat to spread on bread

The resultant ghee has a wonderful aroma and grainy texture. Ghee implies a certain flavor profile, that continues to develop as it is stored for more than a year. So do not refrigerate ghee.

PANCAKES WITH BLUEBERRIES


3 eggs
3/4 cups oil
3 cups milk
3 cups flour (sometimes I use 1 cup whole wheat and 2 cups white. That works too)(picture above is that version)
3 tsp baking powder
1 tsp baking soda
2 cups frozen blueberries

Beat eggs and add all the other wet ingredients. Mix thoroughly. Add flour and baking soda/powder. Mix batter until semi smooth. Stir in blueberries and drop a 1/4 cup at a time onto preheated(350F), greased griddle. Cook until pancake is slightly bubbly. Flip over to other side and continue cooking for about 25- 30 seconds. The finished product will be juicy, slightly golden- purple pancakes. Enjoy!

Note: for plain pancakes use same recipe and just omit the berries. You may also substitute chopped apples, strawberries, raspberries etc for a special change.

SALTY CHEDDAR CHEESE SCONES


4 cups flour
1 1/2 tbs baking powder
2 tsp salt
1 cup margarine
1 1/2 cups warm milk
2 cups cheddar cheese

Mix dry ingredients then add margarine and mix until dough is crumbly. Then add the milk and cheese, mix and knead until all ingredients all well blended. Form little balls out of the dough about the size of small golf balls and arrange on a greased cookie sheet. Bake at 350F for about 15-20 minutes until golden in colour. Real nice for gatherings ...Enjoy!

1 1/2c milk
2 eggs
1ts salt
1/2c sugar
1/2c oil
4 1/2c flour
2ts instant yeast

Divide dough into two parts. Roll out on floury surface one part at a time and spread with a light coat of margarine and sprinkle with brown sugar and cinnamon

CINNAMON BUNS


I posted this recipe before yet i shaped this time as small sized *finger sized ) i didnt have them bund shaped lol kaselt :)

1 1/2c milk
2 eggs
1ts salt
1/2c sugar
1/2c oil
4 1/2c flour
2ts instant yeast

Put into bread maker machine in above order and set on dough cycle.( u can do that by hand if you dont have the machine ! )


When cycle is done divide dough into two parts. Roll out on floury surface one part at a time and spread with a light coat of margarine and sprinkle with brown sugar and cinnamon and bakemix the dough and when itsready done divide dough into two parts. CHICKEN SUMAQ & TANBOUR BREAD

Taboun OR tanbour bread ( buy it from the arabic or halal stores in yr local grocery store)
half kilo onions -olive oil - sumaq powder -salt n pepper
minced meat - pinenuts-almonds -chicken skinneless bonelss -chicken spices -
peel the onion into small dicesized cubes-add olive oil and salt -pepper tumeric and leave it to cook for a while
boil the chicken as usual then add chicken spice (a pack ) then cook it in the oven for a while with a tsp of olive oil as u will brush it and leave it to have the golden glow in the oven
prepare the minced meat (onion -minced meat-salt and pepper and cook it for a while ,leave it aside .

after the above steps
layer the bread and add the onion ,minced meat with the left overjuices in the pan and layer bread and then the onion and minced meat ( 2 layers ) and put it in the oven for like 4-5 minuts to bake ,add the chicken and the almond-pinenuts

I over cooked it in the oven so b aware when you heat it fro the last minute !

SWISSCHALLET OMLETTE

For more than a couple of years and i v been dying over having a real nice swisschallet omlette! yet i never managed to know how they rearly made it ,
Anyways i was2 give away an arm and a leg for one filling breakfast and (voila) domingo called me , he is a friend whom used to work for the culinary art school in winnipeg MB and i really liked the way he taught us our currriculam (he always ate what we cooked and this is a blessing of its own, as whaetever we did ,he enjoyed ) we had a high score often with this guy lol. anyhow, i asked and he did really help with this :

Whisk the omlette real slow and for like 10 minutes ( yesss u do that ) and then add cream fresh as you whisk gradually , easy with yr rage control managemnet now lol

add white ppr flakes and seasalt (or kosher mafhemtesh le7ad delwa2ty whats so special about it yet he insisted olt w malo gebna el kosher salt men food basics) nehayto whisk yala w khlas

then add a small piese of butter or margarine to the pan and then slide the foamy eggs to the pan and leave to cook , as u do that add mushrooms or cheese of yr preferance ( i add romano cheese and pavlova melt )
2alata ba2a dala3 brunsh !
then serve with cheese and watercress and a plumpy slice of toasted french loaf

ANCHOVIESOLIVES AND TOMATOES PIE

Puffpastrty with anchovies and tomatoes and olives sprinkle olive oil and bake
Its very nice snack and brunch or even dinner and it suits ppl with low blood pressure.

FILO CHICKEN AND CHEESE

This is a refreshed recepie i often cook when i am blue lol
Its filling and light somehow as i dont use allot of fats .

filo pastry and 2 spoons of butter melted or oil spray ( i always use canola oil)
spray yer filo pastry as you have it spread in sheets (2-3 -4 layers brushed or sprayed )

The filling : boilt chicken or left overs of roast beef or turkey ..etc +3 spoons of cottage cheese(kareesh) mint sprinkles garlic paprika ppr n salt mix all together and add 2-3 spoons of olive oil

Fill and bake after brushing the rest of th efilo pastry to cover the filling and bake till its baked .
I always have greek salad to company the pie.
