VANILLA MUFFINS


Makes about 15 muffins.
2 eggs
2 deciliters sugar
50 grams butter
3 deciliters plain flour
2 teaspoons baking powder
2 teaspoons vanilla sugar
1 deciliter water

Set oven to 200 degrees Celsius. Beat eggs and sugar until fluffy. Melt butter and let cool. Mix flour with baking powder and vanilla. Add this mix and the water to the batter, a little at a time. Pour into greased muffin tin and bake for about 15-20 minutes in the middle of the oven.

You might also want to try this recipe with some cocoa powder or chocolate, berries, citrus zest...

EASY VICTORIA SPONGECAKE - OF HAJERA BEGUM-GAZA



175g unsalted Butter
175g caster sugar
3 Eggs, beaten
175g self-raising flour

Filling
3 tbsp strawberry jam
500ml double cream

1. Set the oven to 180C/gas 4. Lightly butter two sandwich tins, each with a diameter of 20cm.
2. Cream together the butter and sugar together until light and fluffy, and then slowly add the beaten egg.
3. Fold in the sifted flour and spoon the mixture into the prepared cake tins.
4. Bake for 20 minutes. Leave to cool and then remove from the tins.
5. Whip the cream until thick and use it to fill the sponge with the jam.
6. Dust liberally with icing sugar to serve.

Serves: makes one cake Prep: 20 min
Cook: 20 min

NUTELLA CAKE


see, this is how it will end up with you if this world was made of nutella ;) & of course a caloriefree " u wish "

1 Cake Mix (store bought) chocolate or vanilla works well but feel free to be creative!
1 Jar of Nutella
1 Pint Heavy Whipping Cream
1 tsp Pure Vanilla Extract
1 Pint Strawberriesor any fresh fruits in season ( noway you are thinking watermelon ok ;)
2 tsp Sugar

Prepare the cake according to the manufactures directions for 2 circular layers. Allow cake to completely cool before moving on to the next steps. Doing this a day ahead works really well.

Whip cream and vanilla on an electric mixer or use a hand mixer. When it has formed soft peaks you can add 2 tsp liqueur as well  Godiva or Frangelico works great!
Slice strawberries saving several whole berries to put on top of the cake. Mix sugar with the berries.

Ice both tops of the cake layers with Nutella
Place a big dollop of whipped cream in between the layers, on top of the strawberries.

A LADIES BRUNCH CAKES


a lady's brunch

homemade cakes ,cinnamon cake -shortbreads -scones

BASIC HOMEMADE MIX FOR CAKE 8 c. (2 lbs.) sifted flour
2 c. Cannet white shortening
5 c. sugar
1/4 c. baking powder
4 tsp. salt

Into extremely large bowl turn half of the flour, add shortening, remaining flour, sugar, baking powder and salt. With a pastry blender cut in shortening until it is in fine particles and mixture looks crumbly. Store in airtight container in refrigerator up to 6 months. Makes 15 cups. (If self-rising flour is used, omit baking powder and salt.)

UPSIDE-DOWN COCKTAIL CAKE:
1/4 c. butter
1/2 c. light brown sugar
1 can (1 1/2 c.) fruit cocktail, well drained
1/2 c. finely chopped walnuts
2 1/2 c. homemade cake mix
3/4 c. milk
1 egg
1/2 tsp. vanilla

Melt butter over low heat in 9 inch round pan; remove from heat. Sprinkle with brown sugar, spoon fruit cocktail and nuts evenly over sugar; reserve. Turn cake mix into a small mixing bowl. Add 1/2 cup milk and stir to blend. Beat 2 minutes at medium speed on mixer. Add remaining 1/4 cup milk, egg and vanilla and stir to blend. Beat 2 minutes, turn batter into prepared pan. Bake at 350 degrees for 45 to 50 minutes or until cake tester inserted in center comes out clean. Cool 5 minutes before turning out of pan.

RAISIN SPICE:
4 c. homemade cake mix
1 tsp. cinnamon
1/2 tsp. clove
3/4 c. milk
2 eggs
1 tbsp. light molasses
1/2 c. raisins

Stir cinnamon and clove into cake mix. Add 1/2 cup milk, stir to blend. Beat 2 minutes on medium speed of mixer. Add remaining 1/4 cup milk, eggs and molasses. Stir to blend. Beat 2 minutes. Stir in raisins. Bake in 9 inch greased pan at 350 degrees for 35 to 40 minutes or until done. Turn out and cool.

LAYER CAKE:
4 c. homemade mix
1 c. milk
2 eggs
1 tsp. vanilla

Blend ingredients. Bake in 2 (8 or 9 inch) greased pans at 350 degrees for 25 to 30 minutes

APPLE-CHOCOLATECHIPCAKE


2 eggs
1 1/4 c sugar
2 c oil
3 c finely chopped apples
1 c nuts
1 c chocolate chips
2 1/2 c flour
1tsp salt
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda

Bake covered with tin foil in a,cake pan for at least 40 minutes. Check middle of cake with a toothpick. If the dough is still not fully cooked cover and bake longer. Bake uncovered for the last 10 minutes of baking.

CARROT MUFFINS


I was VERY impressed with this recipe as it turned out nice and fluffy eventhough it's whole wheat!

I baked this muffin with kids i was baby sitting for a next day school event and it ended up lovely ( not to mention the mess we had in the kitchen yet always its a joy when i cok with kids:)) try it

2 eggs
2/3 cup margarine melted
2/3 cup brown sugar
2/3 cup milk
1 tsp vanilla
2 cups grated carrots

In a large bowl beat the eggs, then add the rest of the above ingredients and mix real well. Then add the following:

2 cups whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg

Mix super well. Fill muffin cups and bake at 350F for about 15 minutes

PETIT FOURS


1 cup margarine

1 1/2 cups sugar

2 tsp vanilla
1 tsp almond extract
1 1/2 cups lukewarm milk
3 cups flour
3 tsp baking powder

Combine wet ingredients then add dry ingredients and blend until batter is creamy. Bake in a greased cake pan or bunt pan at 350F until a knife comes out clean! About 30 minutes or so. Let cake cool completely before frosting.

i often make it as a whole cake yet this was for the kids@ school so i had to devide it and haveit carried in a tin ,they luved it begad it was very fluffy and moist :)

CAKE WITH CHOCOLATE CHIP TOPPING


1 cup margarine
11/2 cups sugar
3 eggs
2 tsp vanilla
1 tsp almond extract1 1/2 cups lukewarm milk
3 cups flour
3 tsp baking powder

Combine wet ingredients then add dry ingredients and blend until batter is creamy. Bake in a greased cake pan or bunt pan at 350F until a knife comes out clean! About 30 minutes or so. Let cake cool completely before frosting.

While the cake was still hot in the pan I spread a melted mixture of chocolate chips and whipping cream on top. Nothing was sent back so I'm assuming it was good:)

DELICIOUS NUTCAKE

1 cup chopped almonds or walnuts

BROWNIES

( Lacota davis brownies recepie ,wholebrown puddle -Baltimore )the best brownies you can ever have they scoop vanilla icecream and top it withtoasted almonds and you meeeeeeeelt lol ( akeed you will gain a pound or too mesh mushkiltee ba2a ) lol

2 cups margarine
1 1/2 cups brown sugar
3/4 cup sugar
4 eggs
1/4 cup milk
1 cup dark cocoa powder
2 tsp vanilla
3 cups flour
3 tsp baking powder
1 1/2 cups walnuts (optional)

Mix and thoroughly blend the first 7 ingredients. Then add the rest and blend well. Pour into a greased 11x16 inch pan(or whatever the next size up from the 9x13 inch pan is) and bake in a preheated 350F oven for about 14 minutes. The secret is to under bake! In my oven it takes about 14 minutes to bake just enough without drying the brownies out. Then refrigerate overnight or for a couple of hours before serving. This way they wont crumble or be overly gooey. ENJOY!!

LAYERED FRUITS AND CREAM

Prepare pudding as instructed on the pack ( iusually prepare two flavours strawberry and vanilla) cool down and layer the pudding with ready made or home made cake slices if you ran out of cake you can use ladyfinger biscuits and layer that with fruits of your choice ,top it with cream and chill.

SOMALI CAKE

6 eggs; separated
1 cup sugar
1/2 tsp. cardamom powder
1 cup flour; sifted

Whip the egg whites on high until soft peaks form. Add the sugar and cardamom; continue mixing.
Add the egg yolks one by one. Fold the flour into the mixture. Bake in a pre-heated 300 F oven for 45 minutes. Cool on a wire rack.

CAKE



200 gr selfraising flour
200 gr butter
150 gr sugar
1 package vanillasugar
2 teasp lemonzest
4 eggs (or 3 eggs and 6 tblsp milk)
Mix butter, sugar and vanillasugar creamy
Add the eggs 1 at a time and later mix the sifted flour.


Grease in a (glass)pan of 2 liter, now scatter some breadcrumbs. Pour in cakemix and let cook for 1,5 hour at 170 degrees in oven (1st hour don’t open oven!)

APPLE-PEAR-WALNUTCAKE


200 gr selfraising flour
200 gram butter
130 gr sugar
2 eetl honey
50 gr chopped walnuts
4 eggs
1 teasp cinnamon
1 teasp lemonzest
2 apples & 2 pears
Juice of ½ lemon
50 gr walnuts
1 dl warm honey honing

Mix sugar, honey and butter till sparkly. Add cinnamon and lemonzest.
1 by 1 add now the eggs and later the selfraising flour. With spoon whip the walnuts in this dough.
Cut appels and pears in 4, make notches in it and sprinkle lemonjuice over.

Grease in a ø 24cm (glass)pan, and scatter some breadcrumbs. Put dough in and add on top apples, pears and walnuts.

Heat the honey and pour this over the cake.
Bake 1,5 hour in oven on 160 degrees.

CINNAMON FRUITCAKE


200 gram selfraising flour & sniff of salt (If you have,cakeflour then you can use this instead of flour + salt)
200 gram butter or margarine
200 gram sugar
4 eggs
1 tbsp cinnamon
1 apple cut in very small pieces
Some dried abricots cut in very small pieces
50 gr raisins

Mix with the mixer butter and sugar creamy. Add one at a time the eggs, then mix a couple of minutes very good.
Add now sifted flour and cinnamon bit by bit at the creamy mixture.
Use a spoon to mixture the dried fruit, raisins and apples through this mix

Grease in a (glass)pan of 2 liter, now scatter some breadcrumbs (to let the cake loose easy from the pan) and pour in the cakemix!
Bake about 1hour on 160 degrees (dont open before at least ½ hour of bakingtime,.otherwise your cake sink downL
