1 large chicken breastJuice of 1 large or 2 smaller oranges, zest (grated peel, orange part only) if you wish2,5 dl long grain rice (approx 1 cup)4 dl water (a little over 1,5 cups)1 large clove garlic, finely chopped1 handful cashews, salted or unsalted1 handful raisins - green, yellow, black...1 handful green peas1/2 teaspoon turmeric1/2 teaspoon chilli powder1/2 teaspoon cumin, Salt to taste
Cube chicken breast. Place in orange juice, add garlic. If you have the time, let it marinate for some time! If not, place directly into a saucepan and add water. Bring to a boil and add spices and rice. Add cashews and raisins. Let simmer for 10-15 minutes, then add the grean peas. Let simmer some more until ready, it should take about 20 minutes total but check the chicken and the rice to make sure.If you want to reduce the fat content further, don't use cashews - although the fat in those is of a kind that's good for you.
