1 med. onion; chopped, 2 Tbsp. oil, 1 Tbsp. garlic; minced, 1 Tbsp. tomato paste, 1 tomato, diced, 1 Tbsp. cumin, 3/4 cup quick cooking oatmeal, 5 cups water, 1 chicken cubesalt and pepper.
Heat the oil in a pot; add the onion and cook until translucent.
Add the garlic, tomato paste, tomato, chicken cube, and cumin; simmer for 2 minutes. Add the oatmeal and bring to a boil.
Reduce heat and simmer covered for 20 - 25 minutes.
NOTE: I love this during Ramadan. I find it also tastes really great with a little lemon.
