Put the potatoes in a bowl with the food coloring; cover with cold water and let soak. Put the sliced onion in a ziplock bag with the food coloring and 1 tablespoon on water; let soak. Heat the ghee in a pan; add the potatoes (drain before using) and cook until tender. Add the onions and the raisins and stir fry for 1 minute. Serve over Somali rice.
