AUBERGINESLICES COATED WITH HERBSBREADCRUMBS
3 tbsp breadcrumbs
½ tbsp dill
½ tbsp basil
Wash aubergine, and cut in 1cm slices. Coat with salt and set aside 30 min. Rinse of salt and dry slices. Mix breadcrumbs with dill, basil, salt and pepper.(if you prefer add 1 tbsp parmezan cheese)
Beat egg and put an aubergineslice in, then in breadcrumbmixture and bake in oil.
