Skinless boneless chicken ( whole chicken ,boil it as usual in water -cardamom-salt -peper -onion-1 carrot-u can add any herbs of your desire or other spices ) we will need the boulion ( the chicken broth )
1 large peeled onion, cut in half
1 tablespoon whole black peppercorns
2 cinnamon sticks
1 – 2 loaves of Arabic bread, cut in squares and toasted
( i sometimes use filo dough or *roqaq * egyptian dried pastry cheets after brushing it with oil and garlic i spread them into a baking pan and leave them for 10 minutes in the oven to dry out and be golden , when its crunshy i break them and use them as an alternatice to the arabian bread , so use the avalable ingredients :)
2 – 3 cups greek style yogurt -roub or bulkan yoghurt if you are egyptian then its zabadee (i.e. full fat! At least 10%), slightly thinned if necessary, and flavoured with 2 -3 cloves pounded garlic and 0.5 teaspoons olive oil , or 3 tablespoons tahini *seasame seed oil *
Plenty of toasted or fried pine nuts and whole almonds
Place chicken in large pot and add enough water to cover. Bring water to boil, skim off any foam, then add the onion, peppercorns, salt, and cinnamon sticks. Cook till tender. Remove chicken and reserve strained broth. De-bone chicken and slice or pick apart into large-ish pieces.
after following the steps of roasting ruqaq - filo - or bread :
Place half the bread into a large serving dish, then pour over 2 cups or so of the broth. Then add a generous mound of rice (either plain basmati or basmati or egyptian rice then cover with the chicken. Pour over the yogurt and garnish with parsley, fried nuts, and a generous sprinkling of cinnamon if desired you can add raisins *sultana raisins or persian mix *
serve immediatly because we dont want the nuts to get soft as it will be crunshy and we want the bread to be crispy so dont apply the layers until the last minute when you are ready to serve
leftovers are ok but try not to overuse a bigger plate ,if you have more bread- rice -chicken and nuts leave them seperatly till you need an extra plate so they wont get soggy
